Eggless Banana Jowar Jaggery  Muffins-Sorghum Muffin


Soft,moist ,delicious jowar millet muffins with your evening tea just perfect it is...

Does the name sounds interesting or any of you raising your eye brows jowar(Sorghum) and jaggery is it any Indian sweet no its not trust me these  muffins are just amazingly  soft,moist and delicious.since when i started baking i intake a lot of sugar so it caused a worry for me so how do i satisfy my sweet carvings same time

How do i make it healthy too..Tried this recipe in a small batch but turned out amazing if you are looking for healthy snack for your kids lunch box or even with your evening cup of capacino or tea or why not with a glass of milk along with these beautiful healthy millet muffins for  your kids in the evening think about it..

These eggless muffins made using jowar and wheat flour 50:50 ratio and most sweetener from the jaggery and mashed fully ripen small bananas.I added chopped cashews inside the batter you may top it outside too.




Ingredients:


  • half cup Sorghum(Jowar) Flour
  • half cup wheat flour
  • 2 ripen small Mashed Banana
  • tbsp Sugar
  • half cup jaggery
  • 1/4 cup Oil
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Vanilla Essence
  • pinch of Salt
  • Cashews chopped
  • 3 tbsp curd

Instructions

  • Preheat your oven at 180 degrees C or use kadai filled with salt and cover with lid.
  • fill your muffin tray with liner and keep ready
  • Mash the banana and keep aside.
  • Add oil, sugar,jaggery ,curd,banana mashed and vanilla in a mixing bowl. Whisk well until the sugar and jaggery dissolves.
  • Sieve the flour, baking soda, baking powder and salt and keep aside.
  • Add the flour in little by little in batches to the banana mixture and gently fold it until the batter turns lump free
  • Don’t over beat or over mix though.
  • Fill each muffin cup about 3/4 full with batter using spoon.
  • Top with some nuts if you wish i added cashews chopped inside batter.
  • Bake it at 180 degrees C for 30 minutes in a pre heated oven or till a toothpick inserted into the middle of the muffin comes out clean.
  • Remove it from the oven and place them on a wire rack serve once its cooled completely.


I added  chocolate sauce whisked in butter cream on top or my little one..
