 Papaya Black Raisin Muffin Recipe


Papaya Black Raisin muffin is a best way to make anyone to consume this super power packed nutritious fruit especially kids. This muffin is soft slightly dense yet delicious to be takeover with a cup of hot milk of tea/coffee too.

Its very difficult to make kids eat fruits but they would love to enjoy in form of cup cakes and muffins.you can replace fat by adding fruit puree in place of oil i mean reduce the quantity of oil or butter with puree to enhance the flavor of your cakes and to make it healthy too.And any fruit puree needs to be added only when the recipe calls for adding liquid ingredient oil not any where once the puree added need to be whisked well along with half of the oil together.

I am not a great fan of adding fruit puree to the cakes but trust me it was delicious and more felt happy that i consume some healthy one.

papaya black current raisins muffin





Ingredients.

whole wheat 1 cup

  (240ml cup size )
flax seed powder 2 tbsp
curd 1/3rd cup
baking powder 1/2 tbsp
baking soda 1/2 tbsp
pinch of salt
fully ripen papaya  puree 1/4th cup
oil 1/4th cup
brown sugar or normal sugar 1/4th cup
black raisins 1/4th cup
milk 1/4th cup
vanilla essense 1 tsp


Step by Step Procedure:

Add oil and Powdered sugar and curd  together and whisk well.



Add papaya puree and flax seed powder soaked in water for10 minutes


Whisk all the ingredients well together till soft and silk.



Add the vanilla essence too and whisk well.


Time for dry ingredients to be sieved well and mixed together with wet ingredients.

Add the black raisins and gently fold together.




Add milk little by little and mix well the batter has to be semi thick.

Assume you already kept liners in muffin tray.

Take spoonful and fill the liner .




Dont fill full always leave some space for it to raise further.

Pre heat oven by 180 degree C for minutes and bake it at 30 minutes .

Allow it cool down completely before serve.
