Instant Rava Dosa - Udipi Hotel Style

There are days when typically you run out of idea's for preparing that ideal breakfast in the morning or a snack for the evening.  This is a typical scenario Mother's face while trying to prepare something good and delicious too.

When ever we go for restaurant, My Husband & always prefer a Rava dosa as he loves it for it's crisp, onion flavor with a mild pepper spice and curry leaves.

Unlike the normal "Dosa",  this needn't be fermented for long hours, the beauty is that this can be prepared instantly hence its comes in handy for bachelor's and working mothers .

Traditionally this dosa meant to be crispy however the measurement I had given below is for soft dosa's. I tried both versions both turned out awesome. I made soft dorky little girl who likes this version than try crispier version so you can Alter the  maida consistency for the crispness.

There are many varieties of dosa's been prepared in India like ghee Dosa, Onion Dosa, Tomato's Dosa, Pudina Dosa, Masala Dosa ,Rava dosa. I will try to share most of them.

Cuisine :Indian

Course: Breakfast/Snack

Preparation time: 10 mnts

Cooking time: 10 mnts
'

Ingredients :

Rice flour :1 cup   ( 1 cup =250 ml)
Rava(suji): 1 cup
Maida: half cup
Pepper corns full: 1/2 tbsp
Jeera: 1/2 tbsp
Chopped ginger, Chilles: 1 tbsp
Chopped curry leaves
and coriander leaves: 1/2 cup
Salt as required.
Chopped onions: 1 cup
Ghee:  As required

Prepeartion method:

Mix all the Ingredients in a bowl (as shown in the picture)

Add salt and water make it a thin batter and set aside.

Heat a non-stick Tawa, ensure that the data is hot enough because its very important for the Dosa to come out properly.

Sprinkle onions on top  and pour the thin batter in a un-even shape here and there don't roll it over it will start forming a small little holes .

Pour ghee little here and there and cook it in a low flame.

Crispy version need not be flipped however for the softer version flip both sides and cook it for few minutes.

Now the delicious instant soft Rava Dosa is ready. To be served with any varieties of chutneys(please refer to my version of peanut chutney Andhra style)  and hot Sambar. (I will be posting my version of Sambar which can go well with Idlis and dosa's sooner)

Please watch out this space for more...
