Corn Cheese Balls





Corn and cheese are best friends so together these make it a super hit in a party or a get together. 

I love corns in particular sweet corns it's so creamy when you puree them or crunchy when you add them in salad.

I tried many variations like veggie balls, cabbage balls, just with corn kernels but attempting  for the first time corn with cheese and it turned out very well.. 

This particular oven cheese balls comes from Greece, but it's been an integral part in Indian cuisine too nowadays. 

This recipe is made using corn puree, small potatoes and cheese which are made like a dough and coated in cornflour paste then rolled over in bread crumbs like a small lemon size shape. 

This is an excellent fritters /snack in a party which melts in to your mouth crispy outside and soft inside and the cheese melts which is an awesome feel to start a party...

Ingredients:

Potato :1
Corn kernels:1 cup
Garlic powder :1/2 tbsp
Red chilli flakes :1/2 tbsp
Salt as required 
Cheese cubes:5
Oil for fry

(Using the above ingredients we can make 4-5 balls)


Step:

Boil the corn kernels and potato's and keep aside. 

Mash the potato's, puree the corns make sure that the corns are dry when you puree them add the puree to the mashed potatoes. 

Add red chillies flakes, garlic powder, salt and parsley(optional).i had it in my fridge so I add them kindly don’t substitute with coriander leaves if you don't have parsley that is fine you can ignore. 

Now the most important part as the corns are pureed the consistency if the dough may be little thinner you may add few spoons of corn flour however it will still be sticky so take out little puree in a spoon add it in the corn starch bowl diluted and kept already. 

Roll it over gently with the spoon the shape may be uneven don't bother just ensure that the oven paste is little thicker so that it get stick to the corn puree. 
 
Now take it out and use the dry hand (always ensure you keep one hand dry whenever you make these kinds of starters which involves rolling in bread crumbs) roll it over in a plate filled with bread crumbs. Even now the shape may not be round like a ball not worry keep doing the same procedure and kept in a plate. 


Once you made all the balls now wash your hands completely dry it out now work on those balls. It will be delicate to handle but gently roll it like a ball now you will see getting the proper shape due to the bread crumbs stocked over keep rolling again in to the crumbs to get firmness. 



Once it's shaped properly don't forget it refrigerate for 1 hour also this process will form the balls even more firm and allow the cheese not to melt or burst when you deep fry them .

Heat oil and deep fry the role in a low flame gently till golden. 

You can also bake them if you don't want to keep fried. 

Now enjoy corn cheesy balls with tomato sauce or any sauce of your choice.
