Authentic Cucumber Uthappa - Pan Cakes


We all knew that cucumber is a great source of minerals highly nutritious. It has potassium, fiber and Multi B vitamins and much more. 
Also due to its high water content it keeps the body cool and hydrated during the summer months.

Let's start making cucumber pan cakes. This makes it a Healthy, energetic breakfast to kick start the morning for the kids..  

Ingredients:
Rice flour: 1 Cup

Mixed millet flour: 1/4th Cup 
Grated Cucumber: 1
Curd:1 cup
Salt-As per taste 
Curry leaves: 2 Strings
Coriander leaves chopped: 1/4th Cup
Green chilli paste: For Flavor Only 
Oil -  2 tbsp


Preparation method:

Take a large bowl mix all the above ingredients just leaving the oil. I add little water to make it like a dosa batter consistency .

As curds are already fermented the batter just needs to rest for 15 to 20 minutes .

Take a non stick pan or Dosa Tawa heat it then pour two spoons of the batter make it round like a pan cake and add few spoons of oil and cook  both sides gently. 

Now the cucumber pancake/ uttapam  is ready to be served with tangy tomato or coconut chutney. 

The freshness of cucumber and the flavours of curry leaves and coreinder leaves adds more flavour. 



This is be an excellent choice for kids breakfast or even for lunch box.
