Today's recipe on my mind is why not make Utthapam with different combination than the routine one using left over Dosa batter so making a twist using breads again bread instant Dosa/pan cake is common so why not use ginger breads..
You may want to buy fresh ginger breads or don't worry you can still get the ginger flavor while grinding the ingredients in to smooth batter like consistency. (please instructions below for grinding)
This makes it an awesome breakfast for kids or even you can pack it for lunch box it will be soft and smooth will not go dry unlike thin dosa's.
I prefer buying whole wheat breads but it's up to you to choose on that but both tastes the same despite one being unhealthy and the other being (whole wheat) healthy.

Whole Wheat Breads | 6 Slices |
Samolina

Curds

Salt

Chopped Tomatoes

Corainder Leaves

Two Half Cup Chopped |
Ginger

Rice flour

How to make?
If you are not using ginger breads use normal breads but add half inch sized ginger along with semolina make it a fine paste.
Add rice flour, curds and rest of the other ingredients mentioned above and make it a fluffy batter.
Let it rest for 20 minutes.
Heat the non stick pan brush with little oil and cook the Utthapam on both sides and serve it with any chutneys.. I had used tomato ketchup and my kid enjoyed it.
