Summer Special - Amras(Mango) with Rajgira Puris

Amras Poori

Amras pooris, a Maharashtrian/ Rajasthani Cuisine.

Despite being a southindian my Husband loves devoring Pooris’s Maharashtrian/ Rajasthani Cuisine. But despite we being a southindian my husband and my in laws side would love Amras poori's as they settled here in mumbai for more than  3 decades now .

I am not a great fan of mango's honestly  many would be surprised but yes I am not a  that great fan of that yellow golden fruit so this is dedicated to my husband who loves Amras pooris I tried making it healthy by making the poori's using rajgira atta.

Small tip :

Add a little salt in oil when you deep fry any so that it consume less oil while frying...  is it not a great tip for someone who is health consicious as well craving to eat pooris with Amras .

Ingredients :

Good quality mangoes 2 nos (preferable Alphonso)

Cardamon powder - pinch
Saffrons-  few strings
Sugar-  optional depends on your taste buds
Milk- optional

Preparation method

It's very simple take out the pulp from the mangoes if ur using cardamon powder add little or full then take out the seeds and use only that add few saffrons along sugar if required(if the mangoes are little sour then must add sugar otherwise it's up to your taste buds) in a mixer and grind it to a thick consistency if it's too thick you may want to use milk to make it little thinner but ensure you don't add more otherwise it will turn to mango juice
You may want to add a ghee on top or even otherwise it tastes good that's what the mango lovers say  and top it with dry fruits

Serve it with rajgira poori's or any pooris of your choice. Even it goes well with rottis and naan too.
